Delicious mini apple cakes

The entire tray was finished almost straight away.

There are a few things that could be improved in this recipe but it is definitely not the taste!

You'll need :

  • Almond flour ( 2 cups )
  • Eggs ( 2, lightly whisked )
  • Greek yogurt ( 1/2 cup )
  • Coconut oil ( 1/3 cup, melted )
  • Baking powder ( 1 tsp )
  • White sugar replacement ( 90-100g )
  • Baking soda ( 1/2 tsp )
  • Salt ( 1/2 tsp )


Caramelized apples :

  • Apples ( 1 1/2 , peeled and sliced )
  • Brown sugar replacement ( 1 1/2 tbsp )
  • Unsalted butter ( 25g )
  • Ground cinnamon ( 1 1/2 tsp )

Instructions :


  • Preheat your oven to 160C / 320F ( fan forced ).
  • Grease your baking pan/mold with the oil of your choice.
  • Mix the dry ingredients together.
  • In a separate bowl mix eggs, yoghurt, and coconut oil.
  • Add the wet mixture to the dry mixture and mix well.
  • Melt butter in a saucepan on medium heat, add brown sugar replacement, butter, and 1/2 tsp of cinnamon.
  • Stir the apples every now and then while cooking until they become slightly tender and golden brown.
  • Place apples in the bottom of your pan/mold.
  • Top with the dough mixture.
  • Depending on the size of the cake, you may need to bake for 30 min or more.
  • Test it with a toothpick, it needs to come out clean and the top & edges should be golden brown.
  • Let it cool down before taking it out of the pan/mold.
  • Sprinkle with the rest of your cinnamon and if desired pour over a sauce of your choice.
  • I used sugar-free caramel sauce, but they were already delicious without it.
